Ingredients
- 1 pound baby potatoes
- 4 cloves fresh garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the baby potatoes, then toss them in a large bowl with olive oil, salt, and pepper.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes until golden brown and fork-tender.
- While the potatoes roast, melt butter in a pan over medium heat. Add minced garlic and sauté until fragrant.
- Once roasted, combine the potatoes with the garlic sauce in the pan, tossing gently to coat.
- Transfer to a serving platter, garnish with parsley if desired, and serve hot.
