Description

These Garlic Parmesan Sweet Potato Wedges are a delicious, healthy snack or side dish that combines the sweetness of sweet potatoes with savory garlic and Parmesan cheese.


Ingredients

  • 3 medium or 2 large sweet potatoes
  • 3 tbsp extra virgin olive oil
  • 4-5 cloves fresh garlic, minced
  • 1/2 cup Parmesan cheese, grated, divided
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper, freshly ground
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. Scrub sweet potatoes clean and pat dry. Slice each sweet potato in half lengthwise, then cut each half into 2-3 long spears, and aim for uniform wedges.
  3. (Optional) Soak cut wedges in a large bowl of cold water for 20-30 minutes, then drain and dry.
  4. In a large bowl, mix minced garlic and olive oil. In a separate bowl, whisk together smoked paprika, garlic powder, onion powder, dried oregano, red pepper flakes, sea salt, and black pepper.
  5. Coat sweet potato wedges in the garlic-infused olive oil, then sprinkle with the spice mixture and 1/4 cup of grated Parmesan cheese. Toss well.
  6. Spread wedges in a single layer on the baking sheets and roast for 15 minutes.
  7. Flip each wedge and roast for another 10-15 minutes until tender and slightly browned.
  8. Remove from oven, sprinkle the remaining 1/4 cup Parmesan over the wedges, and roast for an additional 5-7 minutes until bubbly and golden brown.
  9. Transfer wedges to a serving platter, garnish with parsley, and serve immediately for the best crispiness.

Notes

Avoid microwaving leftovers as it can make them soggy. Store in an airtight container for 3-4 days.
