Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)

Instructions
- Prepare the Potatoes and Garlic: Wash the baby potatoes thoroughly, cut them in half, and set them aside. Mince the garlic cloves.
- Season the Chicken: In a mixing bowl, rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes if desired.
- Place Ingredients in Crockpot: Layer the halved potatoes at the bottom of the crockpot, then place the seasoned chicken breasts on top.
- Add Chicken Broth: Pour the chicken broth evenly over the chicken and potatoes.
- Add Garlic and Cheese: Sprinkle minced garlic over the chicken, then add grated Parmesan cheese on top.
- Cook the Mixture: Cover the crockpot and cook on low for 6–7 hours or on high for 3–4 hours.
- Check Doneness: Ensure chicken reaches 165°F (75°C) internal temperature and potatoes are fork-tender.
- Serve and Enjoy: Remove chicken and potatoes, spoon remaining sauce over them, and garnish with parsley if desired.
