Description

Crispy on the outside and herb-infused on the inside, these Garlic Herb Roasted Potatoes are a delightful side dish perfect for any meal.


Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons extra-virgin olive oil
  • 6 garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons fresh parsley for finishing
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 teaspoon smoked paprika (optional)
  • ½ teaspoon garlic powder (optional)


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and scrub the potatoes, cutting them into 1½-inch chunks and pat them dry.
  3. Boil the potato chunks in salted water for 8-10 minutes until fork-tender.
  4. Drain the potatoes and let the steam escape, shaking them to rough up the edges.
  5. Mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper in a bowl.
  6. Toss the roughened potatoes in this mixture until well coated.
  7. Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  8. Roast them for 45-50 minutes, flipping halfway through, until golden-brown and crispy.
  9. Sprinkle fresh parsley and optional Parmesan on hot potatoes before serving.

Notes

For the best results, use Yukon Gold potatoes and serve immediately for maximum crispiness.
