Crispy on the outside and herb-infused on the inside, these Garlic Herb Roasted Potatoes are a delightful side dish perfect for any meal.
Ingredients
- 2 pounds Yukon Gold potatoes
- 4 tablespoons extra-virgin olive oil
- 6 garlic cloves, minced
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 2 tablespoons fresh parsley for finishing
- 2 tablespoons grated Parmesan cheese (optional)
- 1 teaspoon smoked paprika (optional)
- ½ teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Wash and scrub the potatoes, cutting them into 1½-inch chunks and pat them dry.
- Boil the potato chunks in salted water for 8-10 minutes until fork-tender.
- Drain the potatoes and let the steam escape, shaking them to rough up the edges.
- Mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper in a bowl.
- Toss the roughened potatoes in this mixture until well coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Roast them for 45-50 minutes, flipping halfway through, until golden-brown and crispy.
- Sprinkle fresh parsley and optional Parmesan on hot potatoes before serving.

For the best results, use Yukon Gold potatoes and serve immediately for maximum crispiness.
