Description

Crispy on the outside and soft on the inside, these Garlic Herb Muffin Pan Potato Galettes are packed with flavors and perfect as a side dish or snack.

Ingredients

  • 4 large potatoes, thinly sliced
  • 1/4 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a muffin pan.
  2. In a bowl, combine the melted butter, minced garlic, thyme, rosemary, salt, and pepper.
  3. Layer the thinly sliced potatoes in the greased muffin cups. Drizzle the garlic herb butter mixture over the layers.
  4. Bake in the preheated oven for about 25-30 minutes, or until the potatoes are golden and crispy.
  5. Remove from the oven, let cool for a few minutes, then gently remove the galettes from the muffin pan.
  6. Garnish with fresh parsley if desired and serve warm.

Notes

For added crispiness, broil the galettes for a minute or two after baking. Feel free to experiment with different herbs.
