Ingredients
- 1 tablespoon olive oil
- 8 oz baby bella mushrooms, sliced
- 1 cup orzo, uncooked
- 2 cups chicken broth
- 5 cloves garlic, minced
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon salt
- 5 oz fresh spinach
- ½ cup heavy cream
- ¼ teaspoon red pepper flakes
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until golden brown, about 5-7 minutes.
- Remove half of the mushrooms from the skillet and set them aside for later.
- Add the uncooked orzo, chicken broth, minced garlic, Italian seasoning, paprika, and salt to the skillet. Stir to combine and bring to a simmer.
- Allow the mixture to simmer for 5-10 minutes, stirring occasionally, until the orzo is almost tender and has absorbed most of the chicken broth.
- Add the fresh spinach to the skillet and cook until it has wilted, which should take about 2-3 minutes.
- Stir in the heavy cream and the reserved mushrooms. Continue heating on low until warmed through.
- Serve hot, garnished with red pepper flakes and optional Parmesan cheese if desired.
Notes
For a vegetarian option, use vegetable broth instead of chicken broth. Feel free to customize with proteins or different grains.
