Ingredients

  • 1 tablespoon olive oil
  • 8 oz baby bella mushrooms, sliced
  • 1 cup orzo, uncooked
  • 2 cups chicken broth
  • 5 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • 5 oz fresh spinach
  • ½ cup heavy cream
  • ¼ teaspoon red pepper flakes


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until golden brown, about 5-7 minutes.
  2. Remove half of the mushrooms from the skillet and set them aside for later.
  3. Add the uncooked orzo, chicken broth, minced garlic, Italian seasoning, paprika, and salt to the skillet. Stir to combine and bring to a simmer.
  4. Allow the mixture to simmer for 5-10 minutes, stirring occasionally, until the orzo is almost tender and has absorbed most of the chicken broth.
  5. Add the fresh spinach to the skillet and cook until it has wilted, which should take about 2-3 minutes.
  6. Stir in the heavy cream and the reserved mushrooms. Continue heating on low until warmed through.
  7. Serve hot, garnished with red pepper flakes and optional Parmesan cheese if desired.

Notes

For a vegetarian option, use vegetable broth instead of chicken broth. Feel free to customize with proteins or different grains.
