  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth


Instructions

  1. Prep the Ingredients: Toss the chicken, potatoes, and carrots into the slow cooker.
  2. Mix the Garlic Butter Sauce: In a small bowl, combine melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour and Coat: Pour the garlic butter mixture over chicken and vegetables and stir gently.
  4. Set It and Forget It: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
