Description

A delightful fruitcake packed with mixed dried fruits and cranberries, perfect for the holiday season.


Ingredients

  • 2 cups mixed dried fruit
  • 1 cup fresh or dried cranberries
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a small bowl, mix together the dried fruit, cranberries, and nuts (if using).
  3. In another bowl, whisk together the flour, baking powder, spices, and salt.
  4. In a large bowl, cream the butter and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  7. Fold in the fruit and nut mixture.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve with a dusting of powdered sugar or whipped cream. Pairs well with tea or coffee.
