  • 2 large Russet or Yukon Gold potatoes
  • 1 medium yellow onion
  • 8 oz smoked Polish sausage
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste


Instructions

  1. Wash the potatoes thoroughly and cube them into bite-sized pieces. Slice the onion into thin strips and cut the smoked Polish sausage into rounds.
  2. Heat olive oil or butter in a skillet over medium heat. Add seasoned potato cubes and cook for 10 to 15 minutes, stirring occasionally, until golden brown and tender.
  3. Add the sliced onion and cook for an additional 5 minutes until caramelized.
  4. Add the sliced smoked Polish sausage and mix well. Cook for another 10 to 15 minutes, until the sausage is heated through and browned.
