These fluffy pancakes are a quick and easy breakfast option that can be customized to suit any palate, perfect for family breakfasts or special occasions.
Ingredients
- 2 cups / 300g all-purpose flour (or self-raising/whole wheat)
- 4 tsp baking powder
- 1/4 cup / 55g white sugar
- Pinch of salt
- 1 egg
- 1 3/4 cups / 435 ml milk (any kind)
- 1 tsp vanilla extract (optional)
- 4 tsp butter for cooking
Instructions
- In a mixing bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
- Add the egg, milk, and vanilla extract (if using) and whisk until the batter is just smooth, ensuring not to overmix (about 30 seconds).
- Heat a non-stick skillet over medium to medium-high heat.
- Melt 1/2 tsp of butter in the pan, then wipe most of it off with a paper towel, leaving just a thin layer.
- Pour 1/4 cup of batter into the skillet, swirling gently to spread it into a 4.5-inch circle.
- Cook until bubbles appear on the surface, about 2-3 minutes. Flip the pancake and cook for another 30 seconds until golden brown.
- Repeat this process for the remaining batter, re-buttering the skillet every 2-3 pancakes.
- If desired, keep cooked pancakes warm in a low oven until ready to serve.
Notes
Don’t overmix the batter for fluffy pancakes. Let the batter rest for 5-10 minutes for better results.
