Description

These fluffy pancakes are a quick and easy breakfast option that can be customized to suit any palate, perfect for family breakfasts or special occasions.


Ingredients

  • 2 cups / 300g all-purpose flour (or self-raising/whole wheat)
  • 4 tsp baking powder
  • 1/4 cup / 55g white sugar
  • Pinch of salt
  • 1 egg
  • 1 3/4 cups / 435 ml milk (any kind)
  • 1 tsp vanilla extract (optional)
  • 4 tsp butter for cooking


Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  2. Add the egg, milk, and vanilla extract (if using) and whisk until the batter is just smooth, ensuring not to overmix (about 30 seconds).
  3. Heat a non-stick skillet over medium to medium-high heat.
  4. Melt 1/2 tsp of butter in the pan, then wipe most of it off with a paper towel, leaving just a thin layer.
  5. Pour 1/4 cup of batter into the skillet, swirling gently to spread it into a 4.5-inch circle.
  6. Cook until bubbles appear on the surface, about 2-3 minutes. Flip the pancake and cook for another 30 seconds until golden brown.
  7. Repeat this process for the remaining batter, re-buttering the skillet every 2-3 pancakes.
  8. If desired, keep cooked pancakes warm in a low oven until ready to serve.

Notes

Don’t overmix the batter for fluffy pancakes. Let the batter rest for 5-10 minutes for better results.
