Ingredients
- 3 large eggs

- 1 tablespoon butter
- 2 slices of pork bacon (or substitute)

- 2 cups mixed greens (like spinach and arugula)
- Cherry tomatoes (optional)

Instructions
- In a bowl, whisk the eggs together with salt and pepper until well combined.
- In a non-stick skillet, cook the bacon over medium heat until crispy. Remove and set aside on a paper towel.
- In the same skillet, melt butter over medium-low heat.
- Pour in the eggs, allowing them to cook gently while occasionally lifting the edges to let the uncooked egg flow underneath.
- Once the eggs are mostly set, add cream and herbs, folding the omelette in half.
- Serve the omelette topped with crispy bacon and a side of fresh salad dressed with olive oil and vinegar.
Notes
