Description

Ingredients

  • 3 large eggs
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 2 slices of pork bacon (or substitute)
  • 1/4 cup cream
  • 1 tablespoon chopped herbs (like chives or parsley)
  • 2 cups mixed greens (like spinach and arugula)
  • Cherry tomatoes (optional)
  • Olive oil and vinegar for dressing (optional)


Instructions

  1. In a bowl, whisk the eggs together with salt and pepper until well combined.
  2. In a non-stick skillet, cook the bacon over medium heat until crispy. Remove and set aside on a paper towel.
  3. In the same skillet, melt butter over medium-low heat.
  4. Pour in the eggs, allowing them to cook gently while occasionally lifting the edges to let the uncooked egg flow underneath.
  5. Once the eggs are mostly set, add cream and herbs, folding the omelette in half.
  6. Serve the omelette topped with crispy bacon and a side of fresh salad dressed with olive oil and vinegar.

Notes
