Description
A delightful, light, and fluffy banana bread made with oil, perfect for using overripe bananas.
Ingredients
- 3 ripe bananas, mashed
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the mashed bananas, vegetable oil, eggs, vanilla extract, and sugar until smooth.
- In a separate bowl, sift the flour, baking soda, and salt together.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.
- Fold in the chopped nuts, if using.
- Pour the batter into the prepared loaf pan, and sprinkle extra chopped nuts on top if desired.
- Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a richer flavor, use overripe bananas. Avoid overmixing for a fluffy texture.
