Description

A delightful dish that combines the sweetness of fresh figs with the creaminess of goat cheese, perfect for any occasion.


Ingredients

  • 3 slices of bacon, diced and cooked
  • 2 cups baby arugula
  • 2 cups mixed greens
  • 5 fresh figs, cut into quarters (or sixths if large)
  • 2 oz goat cheese
  • 2 tbsp salted pistachios
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp chives, finely diced
  • 1/4 cup good quality olive oil
  • 2 tbsp good quality balsamic vinegar
  • 1 tbsp maple syrup (adjust to taste)
  • 1 clove garlic, crushed
  • 1/4 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Make the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup, crushed garlic, dried thyme, salt, and pepper. Adjust the sweetness to your preference by adding more maple syrup if desired.
  2. Assemble the salad: In a large mixing bowl, combine the arugula, mixed greens, sliced figs, bacon, pistachios, red onion, and chives. Pour the dressing over the salad and toss gently to combine. Crumble the goat cheese on top before serving.

Notes

Use fresh ingredients for the best flavor. Letting the salad sit for about 10 minutes after tossing allows the flavors to meld together.
