Ingredients
- 1 cup cooked rice
- 1 cup cooked chicken, shredded
- 1 cup corn (canned or frozen)
- 1 cup black beans, drained and rinsed
- 1 bell pepper, diced
- 1 avocado, sliced
- 1/2 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced bell pepper and cooked chicken; sauté until the bell pepper is tender.
- Stir in the corn, black beans, cumin, salt, and pepper. Cook for a few more minutes until everything is heated through.
- Serve the chicken and corn mixture over cooked rice, topped with salsa and sliced avocado.
