Ingredients

  • 1 cup cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced bell pepper and cooked chicken; sauté until the bell pepper is tender.
