Ingredients

  • 2 cups pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a crockpot, combine onion, garlic, pumpkin puree, and vegetable broth.
  2. Add cumin, ginger, salt, and pepper.
  3. Stir well and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
  4. Once cooked, blend the soup until smooth using an immersion blender or regular blender.
  5. Stir in coconut milk and heat through.
  6. Serve hot, garnished with fresh parsley.

Notes

For thicker soup, add more pumpkin puree or reduce broth. Add cayenne pepper for heat. Customize with other spices like nutmeg or cinnamon.
