Ingredients
- 2 cups pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp ground cumin
- 1 tsp ground ginger
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a crockpot, combine onion, garlic, pumpkin puree, and vegetable broth.
- Add cumin, ginger, salt, and pepper.
- Stir well and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
- Once cooked, blend the soup until smooth using an immersion blender or regular blender.
- Stir in coconut milk and heat through.
- Serve hot, garnished with fresh parsley.
Notes
For thicker soup, add more pumpkin puree or reduce broth. Add cayenne pepper for heat. Customize with other spices like nutmeg or cinnamon.
