Ingredients

  • 1 can pumpkin puree
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft.
  2. Stir in the chili powder and cumin, cooking for 1 minute until fragrant.
  3. Add the pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth.
  4. Bring to a simmer, then reduce heat to low and cover.
  5. Let cook for about 30-40 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
