Description

Delightful corn fritters that are simple to prepare and perfect as a snack or side dish. Crispy on the outside and soft on the inside.


Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons sugar (optional)
  • Oil for frying


Instructions

  1. In a mixing bowl, combine the flour, baking powder, salt, black pepper, and sugar (if using).
  2. In another bowl, whisk together the milk and egg.
  3. Add the corn kernels to the wet mixture.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  7. Remove and drain on paper towels.
  8. Serve warm with applesauce or syrup.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
