Ingredients
- 8 oz pasta (your choice)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or fresh)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
- Add bell pepper and zucchini, cooking until tender.
- Stir in the black beans, corn, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
- Toss the cooked pasta with the vegetable mixture until well combined.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
Use any pasta shape you like. Consider adding heat with jalapeños or cayenne pepper to customize your dish.
