Description

A quick and delightful meat-free pasta dish that combines vibrant flavors and nutritious ingredients, perfect for family dinners.


Ingredients

  • 8 oz pasta (your choice)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  3. Add bell pepper and zucchini, cooking until tender.
  4. Stir in the black beans, corn, chili powder, cumin, salt, and pepper. Cook for 5 minutes.
  5. Toss the cooked pasta with the vegetable mixture until well combined.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

Use any pasta shape you like. Consider adding heat with jalapeños or cayenne pepper to customize your dish.
