A comforting and healthy soup packed with seasonal vegetables, perfect for chilly days.
Ingredients
- 2 cups butternut squash, peeled and diced
- 2 cups carrots, chopped
- 1 cup celery, chopped
- 1 cup onions, diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a slow cooker, combine all the ingredients. Stir to mix well.
- Cover and cook on low for 360-480 minutes or until vegetables are tender.
- Before serving, season with salt and pepper to taste.
- Ladle into bowls and serve, optionally garnished with fresh herbs or cheese.
Notes
For a creamier texture, blend part of the soup after cooking. Feel free to customize with additional vegetables or spices.
