Description

A comforting and healthy soup packed with seasonal vegetables, perfect for chilly days.


Ingredients

  • 2 cups butternut squash, peeled and diced
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onions, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. In a slow cooker, combine all the ingredients. Stir to mix well.
  2. Cover and cook on low for 360-480 minutes or until vegetables are tender.
  3. Before serving, season with salt and pepper to taste.
  4. Ladle into bowls and serve, optionally garnished with fresh herbs or cheese.

Notes

For a creamier texture, blend part of the soup after cooking. Feel free to customize with additional vegetables or spices.
