Description

A quick and healthy breakfast cake made with oats and apples, perfect for busy mornings.


Ingredients

  • 1 cup oats
  • 1 large apple (peeled and chopped)
  • 3 tbsp honey (or maple syrup for a vegan option)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp yogurt (or a dairy-free alternative)
  • 2 eggs (or flaxseed eggs for a vegan option)
  • 1 tbsp butter or coconut oil (for a dairy-free version, use coconut oil)


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a blender or a bowl (if using a hand blender), add all the ingredients except for 1/4 cup of the oats. Process until smooth.
  3. Mix the remaining oats into the batter to add texture.
  4. Line a small baking pan with parchment paper and pour the mixture into it.
  5. Bake for 20–30 minutes, or until a toothpick inserted comes out clean.
  6. Allow the cake to cool completely, then slice it and refrigerate in an airtight container for at least 1 hour to set.

Notes

For extra crunch, consider mixing in walnuts or chia seeds. Adjust sweetness by tasting the batter before baking.
