Description
A quick and healthy breakfast cake made with oats and apples, perfect for busy mornings.
Ingredients
- 1 cup oats
- 1 large apple (peeled and chopped)
- 3 tbsp honey (or maple syrup for a vegan option)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3 tbsp yogurt (or a dairy-free alternative)
- 2 eggs (or flaxseed eggs for a vegan option)
- 1 tbsp butter or coconut oil (for a dairy-free version, use coconut oil)
Instructions
- Preheat your oven to 180°C (350°F).
- In a blender or a bowl (if using a hand blender), add all the ingredients except for 1/4 cup of the oats. Process until smooth.
- Mix the remaining oats into the batter to add texture.
- Line a small baking pan with parchment paper and pour the mixture into it.
- Bake for 20–30 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool completely, then slice it and refrigerate in an airtight container for at least 1 hour to set.
Notes
For extra crunch, consider mixing in walnuts or chia seeds. Adjust sweetness by tasting the batter before baking.
