Ingredients
- 8 flour tortillas (8-10 inch size)
- 2 cups shredded chicken (store-bought or homemade)
- 1 and 1/2 cups shredded Monterey jack cheese
- 1/2 cup BBQ sauce (plus more for serving)
- 1/2 cup red onion (thinly sliced)
- 1/3 cup cilantro (chopped)
Instructions
- Make the filling by mixing shredded chicken with BBQ sauce until fully coated.
- Heat a large sauté pan over medium-high heat. Place one tortilla in the pan.
- Layer the tortilla with shredded cheese, BBQ chicken, sliced onion, cilantro, and another layer of cheese.
- Top with another tortilla and cook until the cheese begins to melt and the bottom tortilla is golden brown.
- Flip and cook the other side until golden brown.
- Remove the quesadilla from the pan, cut into 4-6 slices, and serve immediately with extra BBQ sauce on the side.
Notes
