Ingredients
- 8 pieces Bone-in, skin-on chicken thighs
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Paprika
- 1/2 teaspoon Dried thyme
- 1/2 teaspoon Dried rosemary
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Smoked paprika (optional)
Instructions
- Pat the chicken thighs dry with paper towels to ensure crispy skin.
- Drizzle olive oil over each thigh and rub thoroughly.
- In a small bowl, mix garlic powder, onion powder, paprika, thyme, rosemary, salt, pepper, and smoked paprika.
- Sprinkle the spice mixture evenly over both sides of the thighs.
- Place the seasoned thighs skin-side up on a baking sheet lined with parchment paper.
- Preheat the oven to 425°F and roast the chicken for 35-40 minutes until internally at 165°F.
- Let the chicken rest for 5 minutes before serving.
