Description

Effortless family dinners with tender chicken in a delicious teriyaki sauce, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup bottled teriyaki sauce
  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 cup pineapple chunks
  • 1 piece bell pepper, sliced


Instructions

  1. Place the boneless chicken breasts or thighs at the bottom of your crockpot.
  2. In a bowl, combine the teriyaki sauce, soy sauce, honey or brown sugar, minced garlic, and grated ginger. Stir until well mixed.
  3. Pour the sauce mixture over the chicken in the crockpot.
  4. Gently add the pineapple chunks and sliced bell pepper on top of the chicken and sauce.
  5. Cover your crockpot with a lid and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  6. Once done, shred the chicken with two forks and mix everything well. Serve over rice or noodles and enjoy!

Notes

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for safety. Feel free to add more vegetables for added nutrition.
