Ingredients
- ¾ teaspoon black pepper
- 1 teaspoon seasoned salt
- ¼ teaspoon dried rosemary
- ¼ teaspoon ground sage
- 1 teaspoon garlic powder
- ¼ teaspoon dried thyme
- 4 tablespoons flour (for dredging)
- ½ cup all-purpose flour (for gravy)
- ¼ cup plain or Italian-style breadcrumbs
- 5 thick-cut bacon strips
- 4 tablespoons butter
- 2 large boneless skinless chicken breasts
- ½ cup vegetable oil (for frying)
- 2-3 drops of Kitchen Bouquet (optional for color)
- 1 beef bouillon cube or 1 teaspoon beef Better Than Bouillon
- 1 teaspoon low-sodium soy sauce or Worcestershire sauce
- 2.5 cups chicken broth (preferably low-sodium)
- ⅓ cup half and half (equal parts milk and cream)
Instructions
- Prepare the Dredging Mixture: On a large plate, mix together the flour, breadcrumbs, seasoned salt, and black pepper. Set this mixture aside.
- Cook the Bacon: In a skillet over medium-low heat, cook the bacon strips until crispy, then transfer to a plate while reserving drippings.
- Prepare the Chicken: Cut each chicken breast horizontally and pound them down to about ¾-inch thick.
- Coat the Chicken: Pat the chicken dry and coat with the dredging mixture.
- Fry the Chicken: In the skillet, add enough oil to fry the chicken. Cook for 4 to 5 minutes per side until golden brown.
- Clean the Skillet: Discard the oil but keep the brown bits in the skillet.
- Make the Gravy: Melt butter in the skillet and whisk in the flour to form a paste.
- Add Broth and Half and Half: Gradually whisk in the chicken broth and half and half until thickens.
- Season It Up: Stir in the beef bouillon, soy sauce, and Kitchen Bouquet if using.
- Simmer the Dish: Let simmer and return the chicken to the pan, add chopped bacon on top.
- Cook Through: Cover and simmer for 10 to 15 minutes until chicken is cooked to 165°F.
- Garnish and Serve: Garnish with chopped parsley before serving.

Use fresh herbs for enhanced flavor. Pound chicken for even cooking, and take time to whisk the gravy gradually.
