Description
A comforting Irish potato pie with creamy filling and cheesy goodness, perfect as a hearty meal or a side dish.
Ingredients
- 4 large potatoes, peeled and chopped
- 2 tablespoons butter
- ½ cup milk
- 1 cup shredded cheese (cheddar or your favorite)
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
- 1 prepared pie crust (store-bought or homemade)
- Fresh herbs (like chives or parsley), optional
Instructions
- Boil chopped potatoes in a pot of salted water until tender (15-20 minutes). Drain and return to the pot.
- Add butter, milk, salt, and pepper to the potatoes, and mash until smooth and creamy.
- Stir in shredded cheese until melted and mixed. Let cool slightly.
- Preheat oven to 400°F (200°C).
- Pour the potato mixture into the prepared pie crust and spread evenly.
- Brush edges of the pie crust with beaten egg.
- Bake in the oven for 25-30 minutes, or until crust is golden brown.
- Remove from oven and let cool for a few minutes before serving.
Notes
For extra flavor, consider adding cooked bacon or ham. You can also make a vegetarian version by adding cooked vegetables.
