Description

A comforting Irish potato pie with creamy filling and cheesy goodness, perfect as a hearty meal or a side dish.


Ingredients

  • 4 large potatoes, peeled and chopped
  • 2 tablespoons butter
  • ½ cup milk
  • 1 cup shredded cheese (cheddar or your favorite)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 prepared pie crust (store-bought or homemade)
  • Fresh herbs (like chives or parsley), optional


Instructions

  1. Boil chopped potatoes in a pot of salted water until tender (15-20 minutes). Drain and return to the pot.
  2. Add butter, milk, salt, and pepper to the potatoes, and mash until smooth and creamy.
  3. Stir in shredded cheese until melted and mixed. Let cool slightly.
  4. Preheat oven to 400°F (200°C).
  5. Pour the potato mixture into the prepared pie crust and spread evenly.
  6. Brush edges of the pie crust with beaten egg.
  7. Bake in the oven for 25-30 minutes, or until crust is golden brown.
  8. Remove from oven and let cool for a few minutes before serving.

Notes

For extra flavor, consider adding cooked bacon or ham. You can also make a vegetarian version by adding cooked vegetables.
