Description
A refreshing salad combining sweet pears, crunchy candied pecans, and a tangy balsamic vinaigrette.
Ingredients
- 4 tbsp brown sugar
- 1 tsp ground cinnamon
- 1 pinch sea salt
- 1/2 tsp vanilla extract
- 1 tbsp water
- 1 cup pecans
- 1/4 cup balsamic vinegar
- 2 tbsp honey
- 1 tbsp dijon mustard
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1 garlic clove (minced)
- 3/4 cup extra virgin olive oil
- 10 oz baby spring mix
- 1 pear (sliced)
- 1 cup dried cherries
- 1 cup candied pecans
- 1/3 cup feta cheese
- 1 cup balsamic vinaigrette
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small saucepan, combine brown sugar, cinnamon, sea salt, vanilla extract, and water; cook over medium heat until sugar dissolves.
- Add pecans, coating them well, then spread on the baking sheet.
- Bake for 10-15 minutes or until golden brown, stirring halfway through. Remove from the oven and let cool.
- For the vinaigrette, whisk together balsamic vinegar, honey, Dijon mustard, sea salt, black pepper, and minced garlic in a bowl.
- Gradually drizzle in olive oil while whisking until well combined.
- In a large bowl, add baby spring mix; top with sliced pears, dried cherries, candied pecans, and feta cheese.
- Drizzle with vinaigrette just before serving and toss gently to combine.
Notes
Use fresh ingredients and allow chilling the salad before serving for enhanced flavor.
