Description

A refreshing salad combining sweet pears, crunchy candied pecans, and a tangy balsamic vinaigrette.


Ingredients

  • 4 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1 pinch sea salt
  • 1/2 tsp vanilla extract
  • 1 tbsp water
  • 1 cup pecans
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 garlic clove (minced)
  • 3/4 cup extra virgin olive oil
  • 10 oz baby spring mix
  • 1 pear (sliced)
  • 1 cup dried cherries
  • 1 cup candied pecans
  • 1/3 cup feta cheese
  • 1 cup balsamic vinaigrette


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, combine brown sugar, cinnamon, sea salt, vanilla extract, and water; cook over medium heat until sugar dissolves.
  3. Add pecans, coating them well, then spread on the baking sheet.
  4. Bake for 10-15 minutes or until golden brown, stirring halfway through. Remove from the oven and let cool.
  5. For the vinaigrette, whisk together balsamic vinegar, honey, Dijon mustard, sea salt, black pepper, and minced garlic in a bowl.
  6. Gradually drizzle in olive oil while whisking until well combined.
  7. In a large bowl, add baby spring mix; top with sliced pears, dried cherries, candied pecans, and feta cheese.
  8. Drizzle with vinaigrette just before serving and toss gently to combine.

Notes

Use fresh ingredients and allow chilling the salad before serving for enhanced flavor.
