Description

A hearty and healthy vegan stew packed with sweet potatoes, lentils, and colorful vegetables, perfect for cooking in a crockpot.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup dried green or brown lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Fresh parsley, for garnish


Instructions

  1. In a crockpot, combine sweet potatoes, lentils, onion, carrots, celery, garlic, diced tomatoes with juices, and vegetable broth.
  2. Add ground cumin, smoked paprika, turmeric, salt, and pepper. Stir well to combine.
  3. Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours), until lentils and vegetables are tender.
  4. About 30 minutes before serving, stir in the kale and cover again.
  5. Serve hot, garnished with fresh parsley.

Notes

For added flavor, feel free to adjust the spices to your taste, or add a pinch of cayenne pepper for a spicy kick.
