Description
A hearty and healthy vegan stew packed with sweet potatoes, lentils, and colorful vegetables, perfect for cooking in a crockpot.
Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 cup dried green or brown lentils, rinsed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, with juices
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 cups kale, chopped
- Fresh parsley, for garnish
Instructions
- In a crockpot, combine sweet potatoes, lentils, onion, carrots, celery, garlic, diced tomatoes with juices, and vegetable broth.
- Add ground cumin, smoked paprika, turmeric, salt, and pepper. Stir well to combine.
- Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours), until lentils and vegetables are tender.
- About 30 minutes before serving, stir in the kale and cover again.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, feel free to adjust the spices to your taste, or add a pinch of cayenne pepper for a spicy kick.
