Description

A warm and comforting soup made with roasted garlic and fresh potatoes, perfect for any season.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 head of garlic, roasted
  • 1 onion, chopped
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh chives for garnish


Instructions

  1. In a crockpot, combine the diced potatoes, roasted garlic, chopped onion, and broth.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  3. Use an immersion blender to blend the soup until smooth.
  4. Stir in the heavy cream, and season with salt and pepper.
  5. Serve hot, garnished with fresh chives.

Notes

Store leftovers in airtight containers for up to 3-4 days, or freeze for up to 3 months. For added flavor, sauté onions before adding to the crockpot.
