A warm and comforting soup made with roasted garlic and fresh potatoes, perfect for any season.
Ingredients
- 2 pounds potatoes, peeled and diced
- 1 head of garlic, roasted
- 1 onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- In a crockpot, combine the diced potatoes, roasted garlic, chopped onion, and broth.
- Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
- Use an immersion blender to blend the soup until smooth.
- Stir in the heavy cream, and season with salt and pepper.
- Serve hot, garnished with fresh chives.
Notes
Store leftovers in airtight containers for up to 3-4 days, or freeze for up to 3 months. For added flavor, sauté onions before adding to the crockpot.
