Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup frozen corn
- 1 cup green beans, chopped
- Fresh parsley for garnish
Instructions
- In a crockpot, combine the ground beef, chopped onion, minced garlic, diced carrots, diced celery, chopped bell pepper, diced tomatoes, beef broth, and diced potatoes.
- Season the mixture with Italian seasoning, salt, and pepper. Stir well to combine all the ingredients.
- Cover and cook on low for 360 minutes or on high for 240 minutes, allowing the flavors to meld beautifully.
- About 30 minutes before serving, add the frozen corn and chopped green beans to the mixture. Stir and allow it to cook until the vegetables are warmed through.
- Serve hot, garnished with fresh parsley for added flavor and color.
Notes
For extra flavor, brown the ground beef before adding it to the crockpot. Feel free to swap in your favorite vegetables.
