Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 package (8 oz) cream cheese
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnishing


Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the black beans, kidney beans, corn, diced tomatoes, cream cheese, and taco seasoning.
  3. Stir to combine, ensuring the chicken is covered in the mixture.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and mix everything well.
  6. Adjust seasoning with salt and pepper.
