Description

Comforting and hearty Crockpot Chili that’s easy to make and perfect for meal prep or feeding a crowd.


Ingredients

  • 1 lb ground beef
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 15 oz kidney beans (drained)
  • 15 oz black beans (drained)
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp oregano
  • 1 tbsp brown sugar (optional)
  • shredded cheese (for topping)
  • sour cream (for topping)
  • green onions (sliced, for garnish)


Instructions

  1. Begin by browning the ground beef with the diced onions and minced garlic in a skillet over medium heat. Once the beef is well-cooked and the onions are translucent, drain any excess fat.
  2. Transfer the beef mixture into your slow cooker.
  3. Add the kidney beans, black beans, crushed tomatoes, diced tomatoes, tomato paste, beef broth, and all the spices into the slow cooker.
  4. Stir the mixture well to combine all the ingredients.
  5. Cover and cook on LOW for 360 minutes or on HIGH for 240 minutes, depending on your schedule.
  6. If you find the chili to be too thick, you can adjust the consistency with a little extra broth or water before serving.
  7. Serve hot, topped with shredded cheese, a dollop of sour cream, and sliced green onions for added flavor and texture.
