Description

A simple and delicious one-pot meal made in the crockpot, featuring tender chicken, vegetables, and rice.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)


Instructions

  1. In the Crockpot, combine the diced chicken, cooked rice, mixed vegetables, soy sauce, garlic, and sesame oil.
  2. Season with salt and pepper to taste.
  3. Stir to combine all the ingredients well.
  4. Cover and cook on low for 240-360 minutes or on high for 120-180 minutes, until the chicken is cooked through.
  5. Before serving, stir the rice to fluff it up and garnish with chopped green onions if desired.
