Description

A delicious and hearty meal made in a slow cooker with tender chicken, flavorful rice, black beans, corn, and spices, perfect for busy weeknights.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup salsa (mild or medium)
  • 1 cup shredded cheese (e.g., cheddar or Monterey Jack)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the uncooked rice, chicken broth, salsa, black beans, corn, taco seasoning, salt, and pepper on top of the chicken.
  3. Stir to combine everything.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and the rice is tender.
  5. About 30 minutes before serving, shred the chicken in the slow cooker using two forks and stir in the shredded cheese.
  6. Serve hot, garnished with chopped cilantro if desired.
