Ingredients
- 3-4 pounds corned beef brisket
- 1 tablespoon black peppercorns
- 8 cloves garlic, minced
- 1 onion, sliced
- 4-5 carrots, cut into chunks
- 1-2 cups beef broth
- Fresh parsley for garnish
Instructions
- Place the corned beef brisket in the slow cooker.
- Sprinkle the black peppercorns and minced garlic over the meat.
- Arrange the sliced onion and cut carrots around the brisket.
- Pour in the beef broth until it covers about halfway up the sides of the meat.
- Cover and cook on low for 480-600 minutes or until tender.
- Once cooked, remove the corned beef and let it rest for 15 minutes before slicing.
- Preheat the oven to 400°F (200°C).
- Place the sliced corned beef on a baking sheet and broil for 5-7 minutes, until the edges are crispy.
- Garnish with fresh parsley and serve.
