Description

Ingredients

  • 3-4 pounds corned beef brisket
  • 1 tablespoon black peppercorns
  • 8 cloves garlic, minced
  • 1 onion, sliced
  • 4-5 carrots, cut into chunks
  • 1-2 cups beef broth
  • Fresh parsley for garnish


Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Sprinkle the black peppercorns and minced garlic over the meat.
  3. Arrange the sliced onion and cut carrots around the brisket.
  4. Pour in the beef broth until it covers about halfway up the sides of the meat.
  5. Cover and cook on low for 480-600 minutes or until tender.
  6. Once cooked, remove the corned beef and let it rest for 15 minutes before slicing.
  7. Preheat the oven to 400°F (200°C).
  8. Place the sliced corned beef on a baking sheet and broil for 5-7 minutes, until the edges are crispy.
  9. Garnish with fresh parsley and serve.
