Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Optional: fresh parsley, chopped for garnish


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil or parchment paper.
  2. Pat the chicken thighs dry with paper towels and place them on the prepared baking sheet.
  3. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, and oregano.
  4. Brush or drizzle the olive oil over the chicken thighs.
