Ingredients
- 3-4 lbs Corned Beef Brisket (point or flat cut)
- 2 tablespoons Dijon Mustard
- 1/2 cup Brown Sugar
- 4 cloves Garlic, minced
- 1 teaspoon Black Pepper
- 1 teaspoon Fennel seeds
- 1 cup Apple Juice or Cider
- 1/4 cup Apple Cider Vinegar
- Spice Packet that comes with corned beef
Instructions
- Prep the brisket: Start by removing the corned beef from its packaging. Rinse it under cold running water to eliminate any excess brine. Pat the meat dry with paper towels.
- Mix the spices: Crush the spice packet that comes with the corned beef. Combine with minced garlic, brown sugar, fennel seeds, and black pepper to create a rub.
- Coat with mustard: Spread a layer of Dijon mustard over the fatty side of the brisket and press the spice mixture into the mustard.
- Choose your cooking method: For oven, preheat to 325°F (163°C), pour apple juice and vinegar in a roasting pan, and cover tightly with foil, baking for 50 minutes per pound. For slow cooker, pour apple juice and vinegar, place brisket seasoned side up, cooking on LOW for 6-8 hours.
- Crisp the exterior: After the brisket is tender, transfer to foil-lined baking sheet and broil for 5-6 minutes until a crust forms.
- Rest before serving: Let the corned beef rest for at least 15 minutes before slicing against the grain.
