Ingredients
- 2 cups Butterhead Lettuce
- 1 (5 oz) can Wild Planet Albacore Wild Tuna
- 1/2 an Avocado
- 1/2 cup Grape Tomatoes
- 2 Tbsp Kalamata Olives
- Lemon juice to taste
- Drizzle of Olive Oil
- Salt & black pepper, to taste
- ⅓ cup canned Chickpeas
- 1/2 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- Pinch of Black Pepper
- Pinch of Pink Salt
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
- Begin by rinsing and draining the ⅓ cup of canned chickpeas.
- In a bowl, toss the chickpeas with smoked paprika, garlic powder, black pepper, and pink salt until evenly coated.
- Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Bake for 15 minutes or until they achieve a crispy texture.
- While the chickpeas are roasting, prepare your base. Fill a bowl with two cups of butterhead lettuce.
- Once the chickpeas are done, add them to the bowl of lettuce.
- Top the salad with sliced grape tomatoes, the drained Albacore Wild Tuna, sliced avocado, and kalamata olives.
- Squeeze fresh lemon juice over the top and drizzle with olive oil to enhance the flavor.
- Season with salt and black pepper to taste before serving.
Notes
Make sure to rinse and drain the chickpeas thoroughly before seasoning to ensure they get crispy in the oven. Store crispy chickpeas separately to maintain their crunch.
