Ingredients
- 2 lb carrots
- 2 tablespoons cornstarch
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons avocado oil
- Finely minced parsley (to serve)
Instructions
- Preheat your oven to 425°F and line 2 – 13×18″ baking sheets with parchment paper.
- Cut the carrots into thin sticks, aiming for uniform sizes for even cooking.
- Place the carrot fries in a large bowl and toss with the cornstarch until they’re lightly coated.
- Add the garlic powder, onion powder, Italian seasoning, salt, and pepper to the bowl. Toss again until all the spices are evenly distributed.
- Drizzle the avocado oil over the coated fries, and give them one final toss.
- Divide the carrot fries between the two baking sheets, making sure none of the fries touch each other.
- Bake in the preheated oven for 15 minutes. Remove and carefully turn each fry over.
- Return to the oven and bake for another 10-15 minutes, until golden brown and crispy.
- Serve with finely minced parsley sprinkled on top.
Notes
Ensure the carrots are evenly cut and do not overcrowd the baking sheets for maximum crispiness.
