Description

Delicious wraps filled with tender chicken, gooey cheese, and smoky barbecue flavor, perfect for a quick meal or gathering.


Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 cups shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup barbecue sauce (your favorite kind)
  • 4-5 large flour tortillas
  • 2 tablespoons vegetable or canola oil


Instructions

  1. In a mixing bowl, add the shredded chicken, cheddar cheese, chopped cilantro, chopped red onion, and barbecue sauce. Toss everything together until well combined.
  2. Take your tortillas and layer them with about 1/2 cup of the prepared mixture. Starting at one end, roll the tortilla up tightly while folding in the sides.
  3. Heat a skillet over medium-high heat. Add enough oil to lightly coat the bottom of the pan.
  4. Once the oil is hot, place the wraps seam-side down in the skillet.
  5. Cook the wraps, turning them every minute or two until they are golden and crispy all around and warmed through. Serve them immediately for the best texture and flavor.

Notes

Shred chicken well for even filling distribution. Don’t overfill to prevent spills. Keep wraps warm in a low oven if making multiple. Ensure oil is hot for crispiness.
