Description

A quick and flavorful creamy pasta dish with mushrooms and spinach, perfect for weeknight dinners.


Ingredients

  • 8 oz pasta of choice
  • 2 tbsp olive oil
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the sliced mushrooms and sauté until golden brown.
  4. Stir in the minced garlic, cooking for an additional minute.
  5. Add the spinach and cook until wilted.
  6. Pour in the heavy cream and bring to a simmer.
  7. Stir in the Parmesan cheese until melted and combined.
  8. Add the cooked pasta to the skillet and toss to coat.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh basil before serving.

Notes

For a lighter dish, replace half of the heavy cream with vegetable broth. You can also add cooked chicken or shrimp for extra protein.
