Description

A simple and flavorful creamy one-pot pasta dish with spinach and tomatoes, perfect for busy weeknights.


Ingredients

  • 12 ounces penne pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add the penne pasta, diced tomatoes (with juice), vegetable broth, Italian seasoning, salt, and pepper. Bring to a boil.
  3. Reduce the heat to medium-low and cover. Cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed.
  4. Stir in fresh spinach and heavy cream, cooking until the spinach is wilted.
  5. Remove from heat and mix in grated Parmesan cheese.
  6. Serve garnished with fresh basil.

Notes

Add additional vegetables or protein for extra nutrition. Can be made dairy-free with substitutions.
