A wholesome and delicious low carb chicken casserole packed with protein-rich chicken, vibrant broccoli, and savory turkey bacon.
Ingredients
- 5 cups broccoli florets
- 8 slices cooked turkey bacon, chopped
- 4 cups cooked chicken, shredded or diced
- 3 cloves garlic, minced
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
- 1 cup ranch dressing
- ½ cup shredded cheddar (for topping)
- ½ cup shredded mozzarella (for topping)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Steam or blanch the broccoli until just tender, then drain it well.
- In a large bowl, combine the cooked chicken, broccoli, turkey bacon, minced garlic, mozzarella, cheddar, and ranch dressing. Mix well until all ingredients are thoroughly combined.
- Spread the mixture evenly in the prepared baking dish.
- Sprinkle the top with the additional cheddar and mozzarella cheese.
- Bake for 25–30 minutes or until the casserole is hot and bubbly.
- Let the casserole rest for 5–10 minutes before serving.
Notes
Don’t overcook the broccoli. Experiment with different cheeses for added flavor. Use leftover rotisserie chicken if you have it.
