Description

A wholesome and delicious low carb chicken casserole packed with protein-rich chicken, vibrant broccoli, and savory turkey bacon.


Ingredients

  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • ½ cup shredded mozzarella
  • ½ cup shredded cheddar
  • 1 cup ranch dressing
  • ½ cup shredded cheddar (for topping)
  • ½ cup shredded mozzarella (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Steam or blanch the broccoli until just tender, then drain it well.
  3. In a large bowl, combine the cooked chicken, broccoli, turkey bacon, minced garlic, mozzarella, cheddar, and ranch dressing. Mix well until all ingredients are thoroughly combined.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Sprinkle the top with the additional cheddar and mozzarella cheese.
  6. Bake for 25–30 minutes or until the casserole is hot and bubbly.
  7. Let the casserole rest for 5–10 minutes before serving.

Notes

Don’t overcook the broccoli. Experiment with different cheeses for added flavor. Use leftover rotisserie chicken if you have it.
