Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh herbs (parsley or chives) for garnish


Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add the diced potatoes, vegetable broth, thyme, and rosemary.
  3. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream and season with salt and pepper.

Notes
