Description

A comforting and delicious dish combining savory chicken, creamy sauce, and rotini pasta, perfect for busy weeknights.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized cubes
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)
  • 12 oz rotini pasta


Instructions

  1. Bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until al dente, then drain, reserving some pasta water, and set aside.
  2. Season the cubed chicken with salt, pepper, Italian seasoning, and garlic powder. In a skillet over medium heat, melt the butter. Add the seasoned chicken and cook until golden brown and no longer pink. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds. Pour in heavy cream and chicken broth, stirring continuously and letting it simmer for about 3-4 minutes until thickened.
  4. Gradually add the grated Parmesan and mozzarella cheeses, stirring until melted into a creamy sauce.
  5. Return the cooked chicken to the skillet, then add the rotini pasta, tossing to coat well in the sauce. Adjust consistency with reserved pasta water if needed.
  6. Plate and garnish with freshly chopped parsley before serving.
