Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized cubes
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
- 12 oz rotini pasta
Instructions
- Bring a large pot of salted water to a boil. Cook the rotini pasta according to package directions until al dente, then drain, reserving some pasta water, and set aside.
- Season the cubed chicken with salt, pepper, Italian seasoning, and garlic powder. In a skillet over medium heat, melt the butter. Add the seasoned chicken and cook until golden brown and no longer pink. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds. Pour in heavy cream and chicken broth, stirring continuously and letting it simmer for about 3-4 minutes until thickened.
- Gradually add the grated Parmesan and mozzarella cheeses, stirring until melted into a creamy sauce.
- Return the cooked chicken to the skillet, then add the rotini pasta, tossing to coat well in the sauce. Adjust consistency with reserved pasta water if needed.
- Plate and garnish with freshly chopped parsley before serving.
