Ingredients
- 2 cups dried cranberries
- 1 cup chopped nuts (walnuts or pecans)
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 3 eggs
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup orange juice
Instructions
- Preheat the oven to 325°F (165°C) and grease and flour a loaf pan.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla and orange juice.
- In another bowl, mix the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the cranberries and nuts.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then remove and let it cool completely on a wire rack.

Store in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
