Ingredients
- 4 – 5 pounds corned beef brisket with spice packet
- 4 cups water
- 1 large onion (quartered)
- 3 cloves garlic (smashed)
- 4 – 5 large carrots (cut into chunks)
- 1 small head cabbage (cut into wedges)
- 4 – 5 medium potatoes (cut into chunks)
- 1 teaspoon black peppercorns
- 2 bay leaves
- Optional for garnish: fresh parsley or mustard
Instructions
- Rinse the corned beef brisket under cold water.
- Prepare a large pot or Dutch oven, adding the rinsed corned beef and pouring in the water.
- Add the quartered onion, smashed garlic cloves, black peppercorns, and bay leaves to the pot.
- Simmer the mixture by covering the pot and bringing it to a boil, then reducing the heat to low for about 2.5 to 3 hours.
- Add the carrots, potatoes, and cabbage about 30 minutes before the meat is done.
- Check the corned beef for doneness with a fork; it should be tender and easy to shred.
- Serve the corned beef alongside the cooked vegetables, garnished with fresh parsley or mustard if desired.
