Ingredients

  • 45 pounds corned beef brisket with spice packet
  • 4 cups water
  • 1 large onion (quartered)
  • 3 cloves garlic (smashed)
  • 45 large carrots (cut into chunks)
  • 1 small head cabbage (cut into wedges)
  • 45 medium potatoes (cut into chunks)
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • Optional for garnish: fresh parsley or mustard


Instructions

  1. Rinse the corned beef brisket under cold water.
  2. Prepare a large pot or Dutch oven, adding the rinsed corned beef and pouring in the water.
  3. Add the quartered onion, smashed garlic cloves, black peppercorns, and bay leaves to the pot.
  4. Simmer the mixture by covering the pot and bringing it to a boil, then reducing the heat to low for about 2.5 to 3 hours.
  5. Add the carrots, potatoes, and cabbage about 30 minutes before the meat is done.
  6. Check the corned beef for doneness with a fork; it should be tender and easy to shred.
  7. Serve the corned beef alongside the cooked vegetables, garnished with fresh parsley or mustard if desired.
