Ingredients
- 1 cup lentils (green or brown)

- 2 celery stalks, diced

- 4 cups vegetable broth
- 2 cups spinach or kale

Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
- Stir in garlic, turmeric, and cumin, cooking for another minute until fragrant.
- Add the lentils and vegetable broth, bringing to a boil.
