Description

A delightful dish combining a creamy sauce with chicken and pasta, perfect for busy weeknights.


Ingredients

  • 12 ounces Pasta of your choice (e.g., penne or fettuccine)
  • 1 pound Chicken breast, boneless and skinless, cut into bite-sized pieces
  • 4 tablespoons Butter (unsalted recommended)
  • 4 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 cup Heavy cream (or coconut milk for a lighter option)
  • 1 cup Chicken broth (low-sodium preferred)
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook until al dente (8-10 minutes). Reserve 1 cup of pasta water, drain and set aside.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook for 6-8 minutes until golden brown. Remove chicken and set aside.
  3. In the same skillet, add remaining butter and sauté minced garlic and diced onion until translucent (3-4 minutes).
  4. Pour in heavy cream and chicken broth, stirring to combine. Add Italian seasoning and red pepper flakes, let simmer for about 5 minutes until slightly thickened.
  5. Return cooked chicken and drained pasta to skillet. Adjust seasoning and toss to coat everything in the creamy sauce. Cook for another 2 minutes.
  6. Sprinkle grated Parmesan cheese over the top and garnish with fresh parsley before serving. Enjoy warm!
