Ingredients

  • 2 cups cottage cheese (low-fat or full-fat)
  • 1 cup spinach (fresh or frozen)
  • 1 bell pepper (diced)
  • 1 zucchini (grated)
  • 1 cup cherry tomatoes (halved)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup grated cheese
  • 1/2 cup oats
  • Salt and pepper to taste
  • Fresh herbs for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine the spinach, bell pepper, zucchini, and cherry tomatoes.
  3. In a large bowl, mix the cottage cheese, oats, garlic powder, onion powder, and half of the grated cheese until well-combined.
  4. Fold the vegetable mixture into the cottage cheese base, and season with salt and pepper.
  5. Pour the mixture into a greased baking dish, top with the remaining cheese, and bake for 30 minutes.
  6. Remove from the oven, let cool slightly, garnish with fresh herbs, and serve.
