Description

A healthy and easy-to-make crustless quiche featuring cottage cheese and fresh spinach, perfect for breakfast or brunch.


Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1 cup shredded cheddar cheese (divided)
  • 1 small onion (finely chopped)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Nonstick cooking spray


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the chopped onion for about 5 minutes or until softened.
  3. In a large bowl, combine the cottage cheese, sautéed onion, chopped spinach, eggs, garlic powder, salt, black pepper, and half of the shredded cheddar cheese. Mix everything well until fully combined.
  4. Pour the mixture into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
  5. Bake the quiche for 30-35 minutes, or until it is set and golden brown on the surface. Allow it to cool slightly before slicing.
